The pork loin/Canadian bacon has some.
On #1 I cut the seal and added liquid Hickory smoke- because that's what I had. It kinda glugged in there, so I think it's going to be on the strong side.
The but/shoulder is dry.
I don't know if that's because I had it out and ready then resealed it in a vacuum bag because I needed a two digit read on the scale and couldn't use the one in the kitchen
I mean it's dry.
The colors aren't as far apart as the camera makes it look, but I'll be hot smoking it then refrigerating part and freezing part, so I doubt there's that much wrong with it besides maybe taste.
Making bacon.
After I finally got a digital scale that goes to two digits for the Prague #1 powder.
The first one is a Butt/shoulder that hopefully will result in Buckboard bacon after I smoke it.
The other attempt is two pork loins of about four pounds each to hopefully get Canadian bacon out of it.
I had to wait for the scales because you don't want to use too much Prague powder/pink cure or whatever else you want to call it. luckily there's a page for that.
And yes I noticed the trigger discipline.

We had to fill two 10 gallon propane tanks at Tractor Supply. After loading them and securing them in the truck (and waiting for some dickhead who had up parked in) we were on the way home.
