Put 'em on the (cold) grill and hit them with a garden weed burner. You can blister the skins and cook the peppers pretty quick. Experiment with a few to get the hang of it, then go to town. I can do 40# in about as many minutes. Toss each batch into a heavy duty trash bag while they're hot and close it up to let them steam awhile The skins just slide right off.
